Each colour is measured, not chosen: the block's textures are read out of the client jar, transparent pixels are dropped, the rest are quantised to four bits per channel and the largest group is the dominant colour. It is converted to HSL to pick the family — hue first, with saturation and lightness deciding white, grey, black and brown, since brown is a dark or muted red, orange or yellow rather than a hue of its own.
No block in this family is tinted at render time, so every colour here is the texture file exactly as it ships. The blocks the game does tint end up in red and green.
One state per block, the resting one the inventory shows, and one render each at
fit=block so a torch and a full cube are drawn at the same
scale. Every block here links to its own page, where the same colour is listed next to the textures it
came from.
